Quick and Easy Burrito Casserole
Kids love this quick and easy burrito casserole with lots of flavor; try this during a busy week when you have no time to cook.
Set the oven to 375 degrees Fahrenheit (190 degrees C).
A large skillet should be heated to medium-high.
Cook and stir the beef in the hot skillet for 5 to 7 minutes, or until it is browned and crumbly.
Drain and get rid of grease.
Cook and stir the mixture for an additional five minutes or until the meat is coated with taco seasoning.
Stir in the refried beans, corn, and enchilada sauce.
In the base of a baking dish, layer tortilla strips.
More tortilla strips and Mexican cheese are added on top, and the layering process is repeated as necessary.
Finish with a layer of cheese from Mexico.
Bake for 8 to 10 minutes, or until the cheese is melted and golden.
