This quick and simple eggplant casserole is delicious and has a mild flavor thanks to the cheese.

Set oven to 350 degrees Fahrenheit (175 degrees C).

In a medium microwave-safe dish, put the eggplant.

Cook on High for 5 minutes, stirring once, or until tender.

To a 9×9-inch baking dish, transfer.

Add egg, garlic, onion, and 1/2 cup of cheddar cheese stuffing mixture.

Italian seasoning, salt, and pepper are used to season.

Bake in the preheated oven for 15 minutes.

The remaining cheese should be sprinkled on top and baked an additional 15 minutes, or until bubbling and lightly browned.
