Moist Cranberry Orange Bread
Mandarin oranges and whole cranberries keep this moist quick bread tangy and sweet.
Set oven to 400 degrees Fahrenheit (200 degrees C).
Butter a big loaf pan.
In a large bowl, combine the flour, 1 3/4 cups sugar, baking powder, salt, and baking soda.
Stir in melted butter until the mixture resembles crumbles.
Mandarin oranges and about 1/4 cup of the cranberries should be set aside.
Stir the remaining fruit into the flour mixture.
In a different bowl, whisk together the eggs, milk, sour cream, vanilla extract, and orange extract.
Stir the egg mixture into the flour mixture gradually until the batter is completely incorporated.
Fill the prepared loaf pan with the batter.
Spread the batter over the mandarin oranges and cranberries you saved, then top with the remaining 1 tablespoon of sugar.
