Lemon Zucchini Bars

Lemon Zucchini Bars
This snack cake is a great way to use up that abundant zucchini harvest!

Set oven to 350 degrees Fahrenheit (175 degrees C).

Butter a 9×13-inch baking dish.

Combine sugar, oil, eggs, lemon rind, and lemon juice in a large bowl and stir well.

Add the shredded zucchini and stir.

Combine salt, baking soda, baking powder, and flour in a separate bowl.

Add this mixture to the zucchini mixture gradually.

Add the walnuts and stir again until well combined.

Pour the batter into the prepared pan, and bake for 35 to 45 minutes, or until a tester inserted in the center comes out clean.

Cool.

Cake should be cut into bars after being dusted with sifted confectioners’ sugar.

Cut into bars and sift confectioners’ sugar over the top.
