Lemon Poppy Seed Muffins
Use this recipe to make moist poppy seed muffins by substituting instant lemon pudding mix.
Set oven to 350 degrees Fahrenheit (175 degrees C).
Put paper liners in the muffin cups.
Cake mix, eggs, hot water, vegetable oil, pudding mix, and poppy seeds are combined in a large bowl and blended on low speed for 4 minutes.
The mixture is then poured into lined muffin cups until about 1/3 full.
Bake for about 20 minutes, or until golden and the tops spring back when lightly pressed.
