Ethiopian Firfir with Dried Beef (Quanta Firfir)
This well-known Ethiopian stew, Quanta Firfir, features dried beef and is prepared with tomatoes, berbere seasoning, injera, and spiced clarified butter.

Onions should be cooked in a sizable saucepan at a medium-high heat.

Cook 5 minutes under cover or until the food begins to brown.

Add vegetable oil and garlic paste; stir-fry for 5 minutes or until fragrant.

Add the tomatoes and stir; cook for 5 to 7 minutes, or until soft.

The dried beef, berbere seasoning, and 1/2 cup water are added to the pan.

Cook for about 10 minutes on medium heat to combine flavors.

Once the beef has softened and the sauce has thickened, about 20 minutes later, continue cooking while adding 1/3 cup water every few minutes.

Add salt and kibbeh and stir.

Toss 1 injera into the sauce after tearing it into palm-sized pieces.

Serve whole injera with beef and sauce.
