Briam (Greek Baked Zucchini and Potatoes)
Briam, a traditional Greek baked vegetable dish with potatoes, zucchini, red onions, tomatoes, parsley, and olive oil, can be a main dish or a side dish.

Set the oven to 400 degrees Fahrenheit (200 degrees C).

Spread red onions, potatoes, and zucchini in a very large baking dish (9×13-inch or larger or use 2 baking dishes if necessary).

Cover with parsley, olive oil, and pureed tomatoes; liberally sprinkle with salt and pepper.

Combine all ingredients and toss to coat the vegetables completely.

Bake for one hour in the preheated oven.

After stirring, bake the vegetables for an additional 30 minutes or so, or until they are tender and the moisture has evaporated.
