Chef John’s Dark Chocolate Mousse
Rich dark chocolate mousse is so easy to make and so impressive your guests won’t believe you made it yourself. This has a pinch of hot chile just for extra flavor.
Over low heat, bring a saucepan of water to a simmer.
In a heatproof bowl, combine chocolate, butter, salt, chipotle pepper, and 2 tablespoons of water.
Place bowl over a pot of simmering water.
Once the butter has melted, gently whisk the chocolate mixture until it is glossy and smooth.
Allow to cool for a short while.
Over the same simmering water, whisk egg yolks with 2 tablespoons water and sugar for 3 minutes, or until the mixture is foamy and hot to the touch.
Warm chocolate mixture should be combined with hot egg mixture; whisk until smooth before placing over a bowl of ice to chill.
Stir continuously until the mixture reaches room temperature or a little bit cooler.
