Bacon-Wrapped Chicken Pesto
This classy dinner for two features chicken thighs that have been stuffed with pesto and cheese before being wrapped in bacon and cooked to juicy perfection.
Set oven to 350 degrees Fahrenheit (175 degrees C).
Spray cooking spray on a baking sheet before lining it with aluminum foil.
In a bowl, combine pepper, salt, onion powder, and garlic powder.
Chicken thighs should be covered on both sides with the onion powder mixture.
Make a pocket by lifting the skin; then, put two tablespoons of pesto and one tablespoon of mozzarella cheese inside the pocket.
Bacon is used to encircle the chicken and seal the pocket.
On the baking sheet, arrange the chicken thighs seam-side down.
For about an hour, bake the chicken in the preheated oven until an instant-read thermometer inserted near the bone registers at least 165 degrees F (74 degrees C).
