Zucchini-Lemon-Poppy Seed Muffins
Just don’t tell picky eaters these delicious lemon poppy seed muffins contain a green vegetable – zucchini!
Set the oven to 350 degrees Fahrenheit (175 degrees C).
Put paper liners in each of the 18 muffin tins.
In a big bowl, mix the eggs and brown sugar.
Beat for one to two minutes at medium-high speed.
Oil, applesauce, lemon zest, vanilla extract, and lemon extract should all be thoroughly mixed in.
In a different bowl, combine all-purpose flour, whole wheat flour, baking powder, baking soda, and salt.
Add to the mixture of brown sugar.
Add poppy seeds and zucchini and combine.
Fill the muffin liners with batter.
Any empty muffin tins should be filled with water.
Bake in the preheated oven for 17 to 18 minutes, or until a toothpick inserted in the center comes out clean.
