White Wine Chicken Soup
Chicken and a multitude of vegetables, including a whole head of garlic, and a touch of white wine are simmered a good long while for a mellow flavor.
Combine the chicken, parsnips, garlic, onions, carrots, zucchini, celery, sweet potato soup mix, oregano, paprika, water, wine, salt, and pepper in a sizable soup pot or Dutch oven.
Over high heat, cover and bring to a boil.
Boil for 30 minutes with a partial lid on, then lower heat to low and simmer for an additional 90 minutes.
