West Indian Curried Chicken
This is a standard West Indian recipe for curried chicken. Very simple to prepare and delicious when paired with typical Caribbean cuisine. Rice and peas go well with it.

In a big pot, heat the oil on medium-high.

Cook the chicken, onions, and garlic for about 5 minutes, or until the chicken is browned.

Curry powder, salt, and potatoes should all be combined before adding water to halfway cover the chicken.

30 to 40 minutes, with the lid on, until the meat is tender.

Use hot pepper sauce as a finishing touch.
