Vegan Pumpkin Cookies
Almond milk, pumpkin, and vegetable oil are the only ingredients in these quick and simple vegan pumpkin spice cookies.
Set oven to 400 degrees Fahrenheit (200 degrees C).
In a bowl, combine the following ingredients: salt, cinnamon sugar, pumpkin puree, almond milk, vegetable oil, baking soda, and vanilla extract.
Stir until the dough is smooth.
Onto the baking sheet, spoon about 1 tablespoon of dough per cookie.
Bake in the preheated oven for 10 to 12 minutes, or until the edges of the cookies start to turn crisp.
Cookies should cool on the baking sheet for two minutes before being moved to a wire rack to finish cooling.
