Vegan Garden Tacos
Try this recipe to whip up delicious quick and easy vegan tacos full of garden greats like zucchini, tomato, and spinach, on corn tortillas.
Over low heat, warm coconut oil in a skillet.
Add the green chiles, tomato, onion, and zucchini.
Cook and stir for 5 to 7 minutes or until vegetables are tender.
Stir in the spinach and chipotle seasoning.
Heat tortillas in the microwave for 30 seconds while they are wrapped in a wet paper towel.
Put filling on top of tortillas.
