Sweet Potato Potato Salad
In particular, when combined with plain white potatoes in an old-fashioned potato salad, sweet potatoes—which we adore—are fantastic. This one contains celery, hard-boiled eggs, a tiny bit of chopped onion, a little bit of mustard, and mayonnaise.
Large pot of salted water should be brought to a boil.
Add the potatoes and cook for about 30 minutes, or until they are tender but firm.
Peel, drain, and chop.
In a saucepan, add the eggs and then the cold water.
Water is brought to a boil.
Eggs should stand in hot water for 10 to 12 minutes with the cover off.
Take out of hot water; let cool; then peel and chop.
Combine the celery, onion, potatoes, and eggs.
Mayonnaise, mustard, salt, and pepper are whisked together.
Toss well to coat after adding to potato mixture.
Place in the fridge and serve cold.
