Sweet Cornmeal Cake Brazilian-Style
This Brazilian recipe mashes cornbread and cake together for a great accompaniment to a mug of coffee.
Set oven to 340 degrees Fahrenheit (170 degrees C).
Prepare a 10-inch round cake pan with oil and flour.
Blend the following ingredients in a blender: cornmeal, sugar, milk, coconut milk, flour, eggs, and vegetable oil.
Add baking powder, and blend until combined.
Fill the prepared cake pan with the cornmeal mixture.
Bake in the preheated oven for 30 to 40 minutes, or until a toothpick inserted in the center comes out clean.
