Stuffed Orange Peppers
Orange bell peppers are stuffed with ground turkey, rice, tomatoes, and Gouda cheese for a quick and easy weeknight dinner.
Cook orange bell peppers for about 5 minutes, or until they begin to soften, in a large pot of boiling water.
Drain.
A large skillet should be heated to medium-high.
Cook and stir the turkey and onion in the hot skillet for 5 to 7 minutes, or until they are browned and crumbly; drain and discard grease.
Set oven to 350 degrees Fahrenheit (175 degrees C).
Add liquid smoke, tomatoes, and rice to the turkey mixture; cover the skillet and simmer for 15 minutes or until the rice is tender.
Turn off the heat and stir the Gouda cheese into the turkey mixture.
Fill each orange bell pepper with the turkey mixture, then arrange the peppers in a baking dish open-side up.
Wrap the dish in aluminum foil.
