Steamed Squash Medley with Sun-Dried Tomatoes
Zucchini and yellow squash are steamed with sun-dried tomatoes and sweet onions, and tossed with butter.
After adding the boiling water to a bowl with the sun-dried tomatoes, let it sit for 10 minutes.
Chop tomatoes coarsely after removing them with a slotted spoon.
Put the water aside.
Bring to a boil the sun-dried tomato water that has been set aside in a saucepan.
Put the finely chopped onion, zucchini, and sun-dried tomatoes in a steamer basket, and place the basket over the boiling water.
Vegetables should be tender after 15 minutes of simmering on low heat with a cover.
Throw water away.
Place the steamed vegetables in a bowl and season with salt, pepper, and butter.
