Squash Calabacitas
A light lunch, or serve with cheese and tortillas. Also good as a side dish with your favorite Mexican food.

Over medium-high heat, warm up the olive oil in a big skillet.

When translucent, stir in the onion and garlic.

Sauté the poblano pepper and zucchini until soft.

Beans and corn are added; heat thoroughly.

to taste, add salt to the dish.
