Soft Hard-Boiled Eggs
To get tender, creamier yolks when you need them, use Chef John’s wonderful technique for making perfectly cooked soft hard-boiled eggs!
A 3-quart saucepan with a lid should be filled with water.
Place in a pan and heat to a low boil.
Place the eggs in the water with care.
Immediately cover the pan, lower the heat to medium, and cook for 9 1/2 minutes.
