Seedy Good-Health Banana Bread
This hearty banana bread is made with whole wheat flour, teff, and lots of seeds for a nutritious breakfast or satisfying snack.
Set oven to 350 degrees Fahrenheit (175 degrees C).
Two 9×5-inch loaf pans should be greased with coconut oil.
In a big bowl, combine butter, eggs, and applesauce and beat until smooth.
Add salt, vanilla extract, and white sugar; combine well.
Stir the bananas, sour cream, and baking soda into the applesauce mixture until well combined in a separate bowl.
Add 1/4 cup of all-purpose flour at a time, stirring steadily until thoroughly combined after each addition.
Banana-flour mixture should be gradually stirred until batter is well combined, adding 1/4 cup of whole wheat flour at a time.
Add flax seeds, chia seeds, poppy seeds, teff, and almonds to the batter.
Fill the prepared loaf pans with batter.
