Savory Lemon Dill Parmesan Scones
These light, fluffy scones, which have a cheese-topped Parmesan crust, are delicious served as a savory side dish at breakfast, lunch, or dinner.
Set oven to 375 degrees Fahrenheit (190 degrees C).
Use parchment paper to cover a baking sheet.
To make mock buttermilk, combine 1/2 teaspoon lemon juice with soy milk in a small bowl.
Allow to sit for 5 to 10 minutes until curdled.
With a fork, combine flour in a large bowl with 3 tablespoons lemon juice, sugar, baking powder, dill, and salt.
Using a pastry blender, incorporate butter until dough begins to clump together.
In a bowl, combine the remaining 2 tablespoons of lemon juice with the egg to make mock buttermilk.
Pour over the dough, then quickly incorporate with a fork.
