Roasted Spicy Broccolini
This Mediterranean-inspired roasted broccolini combines crushed red pepper, garlic, oregano, and feta for a spicy side dish that pairs perfectly with grilled steak or salmon.
Set the oven to 400 degrees Fahrenheit (200 degrees C).
Use parchment paper to cover a baking sheet.
Remove any leaves and trim the broccolini’s bottoms by about 1/4 inch.
Put the broccolini in a sizable plastic bag that can be sealed.
In a small bowl, mix the oil, vinegar, salt, garlic powder, oregano, crushed red pepper, and black pepper.
Pour over the broccolini and toss to coat gently.
For five to ten minutes, seal the bag and turn it over halfway through.
On the prepared baking sheet, arrange the broccolini in a single layer and sprinkle with the feta cheese.
About 15 minutes of roasting time in a preheated oven will result in browned tops and crisp-tender stems.
