Radish Green Frittata
A delicious brunch dish is made with sauteed radish greens, leeks, and fluffy egg frittata. Add a few dashes of your preferred hot sauce on top.
In a skillet that can be used in the oven, warm the olive oil.
Leeks should be cooked and stirred for 3 to 5 minutes, or until soft and separated.
Add radish tops and cook for an additional 3 to 5 minutes, or until wilted.
Set the oven’s broiler to high and place a rack about 6 inches from the heat source.
In a bowl, combine eggs, heavy cream, and Parmesan cheese.
Turn heat down to medium-low and add egg mixture to the leek mixture in the skillet.
Cook with the lid on for 5 to 10 minutes, or until the edges are firm and starting to pull away from the skillet’s sides.
Cook the cheese in the skillet under the broiler for three to five minutes.
