Pumpkin-Banana-Oat Muffins
This delicious, healthier, grab-and-go snack combines oats, pumpkin, and banana with autumn spices and Greek yogurt.
Set the oven to 350 degrees Fahrenheit (175 degrees C).
In a bowl, mix together the flour, oat flour, baking soda, baking powder, salt, cinnamon, ginger, nutmeg, and cloves.
White sugar and butter brown sugar should be combined separately and thoroughly mixed with an electric mixer.
Mix again on medium speed while adding the eggs, yogurt, and vanilla extract.
Blend in the pumpkin puree and bananas after being mashed.
Add pecans and chocolate chips and combine.
Add flour mixture to batter and stir.
In a bowl, mix the pecans and chocolate chips for the topping.
Fill each prepared muffin cup with batter, about two-thirds full.
Add some toppings.
Bake in the preheated oven for 25 to 30 minutes, or until a toothpick inserted in the center comes out clean.
