Pumpkin and Pear Bisque with Goat Cheese
Roasted pumpkin and pears add sweet undertones to this creamy bisque topped with crumbled goat cheese.
Set the oven to 425 degrees Fahrenheit (220 degrees C).
On one side of a baking sheet with a rim, arrange pumpkin chunks.
On the opposite side, arrange pear slices.
Add a drizzle of olive oil and stir to coat.
For about 30 minutes, roast in the preheated oven, stirring halfway through, until the pumpkin is easily pierced with a fork.
Over medium heat, cook bacon in a sizable pot for 5 minutes.
Add the onion and fennel, and cook for 5 minutes, or until the onion is clear and soft.
Add butter and garlic, then season with salt, pepper, and cinnamon.
