Pork Carnitas
This recipe for Dutch oven carnitas uses slow-cooked, seared, and spiced pork that has been tenderized before being gently shred with forks.
In a sizable Dutch oven, heat the vegetable oil over high heat.
Salt the pork shoulder pieces before placing them in the Dutch oven.
About 10 minutes of cooking is required to brown all sides.
Add the cumin, chili powder, onion, garlic, and lime juice.
Add the chicken broth, and then bring to a boil.
Reduce heat to medium-low, cover, and simmer for about 2 1/2 hours or until pork is extremely tender.
Set the oven to 400 degrees Fahrenheit (200 degrees C).
Place the pork shoulder on a sizable baking sheet and keep the cooking liquid aside.
Pork pieces should be given a small amount of cooking liquid and a light salting.
