Pollo Guisado
This guisado pollo is delicious and easy to make. In this simple recipe for chicken stew, the chicken receives flavor from saz3n, sofrito, and other seasonings.
In a Dutch oven, heat the olive oil over medium-high heat.
Chicken should be salted and peppered before being added to a hot pot to brown for 6 to 7 minutes on each side.
Place the chicken in a bowl and shield it with aluminum foil.
Onion should be added to the pot and sautéed until translucent, about 5 minutes, on medium heat.
Cook for one minute after adding the garlic.
Add the sofrito, stir, and cook for 2-3 minutes.
Bring to a boil while adding the potatoes, chicken broth, tomato sauce, saz3n, cumin, and bay leaf.
Add the chicken back to the pot.
For one hour, cook covered.
