One Pot Thai-Style Rice Noodles
This recipe for a colorful and delicious one-dish meal combines rice noodles, chicken, and vegetables in a sauce with strong Asian flavors.
In a small bowl, whisk cornstarch and water until thoroughly combined.
Large pot with chicken broth and cornstarch mixture added sour cream cod sauce the rice vinegar garlic-chile sauce broth with vegetable oil, ginger, garlic, and coriander.
Cover and heat until boiling.
Place the rice noodles in the boiling sauce, lower the heat to medium, and simmer for 5 to 10 minutes, or until the noodles are tender.
Chicken, red bell pepper, and zucchini are stirred into the sauce.
Return to a boil, cover, and simmer for an additional five minutes or until the vegetables are barely tender.
Remove from heat, cover, and allow to thicken for 5 minutes.
Crushed peanuts and cilantro should be used as garnish.
