‘Not Nanaimo Bar’ Squares
Like the Nanaimo Bar, this bar cookie has a center custard layer and chocolate top. It’s the peanut butter base that makes it ‘Not Nanaimo.’

Butter an 8×8-inch square baking dish.

In a large pot over medium heat, combine peanut butter, brown sugar, and corn syrup; cook and stir just until warm and well combined, about 3 minutes; remove from heat.

Stir the cereals (Corn Flakes and Crispy Rice) into the peanut butter mixture before pressing it evenly into the prepared pan.

In a bowl, combine the custard powder and confectioners’ sugar.

Gradually incorporate 1/2 cup melted margarine into the custard mixture.

Spread the custard mixture evenly over the cereal mixture after moistening with warm water to a spreadable consistency.

Melt chocolate in a microwave-safe bowl for about a minute with the remaining 2 tablespoons of margarine.

Over the custard layer, pour the chocolate mixture.

Cut cookies into 1-inch squares after chilling for about 30 minutes until chocolate has hardened.
