These Irish mashed potatoes are quick and easy to prepare. They are made with a simple mix of potatoes, butter, and cream for a tasty side dish.
Put the potatoes in a big pot, add salted water, and bring to a boil.
Simmer for 20 to 25 minutes until tender, reducing heat to medium-low.
Drain.
In a bowl, mash the potatoes with a potato masher or a low speed electric mixer until they are smooth.
In a small saucepan over medium heat, warm the half-and-half for 3 to 5 minutes, or until the butter has melted.
Potatoes should be mashed or beat with butter, salt, black pepper, and garlic powder until they are fluffy and light.
For a creamier texture, stir in additional half-and-half, 1 tablespoon at a time.
