Marinated Vegetable Medley
Fresh broccoli, cauliflower, carrots, mushrooms and artichokes heats are succulent when draped in this slightly sweet herb vinaigrette.
The vinegar, oil, onion, sugar, salt, basil, oregano, and garlic powder are whisked together in a small saucepan.
Mixture should be brought to a boil before being simmered for 12 minutes with a lid on.
Add the artichoke hearts, broccoli, cauliflower, carrots, and mushrooms to a big bowl.
Pour the vinegar mixture over everything and coat with a toss.
For at least three hours, cover and chill.
Use a slotted spoon when serving.
