Maple Asparagus Mini Frittatas
Mini frittatas loaded with asparagus, Swiss cheese, and maple syrup are a quick and easy on-the-go breakfast the whole family will love.
Fill a saucepan with water until it is just below the bottom of the steamer insert.
Water is brought to a boil.
Add the asparagus, cover, and steam for 2 to 4 minutes, or until tender.
Set oven to 350 degrees Fahrenheit (175 degrees C).
Spray cooking oil into six muffin tins.
In a bowl, combine the milk, eggs, maple syrup, salt, and pepper.
Put 1 asparagus half and roughly 1 teaspoon of onion into each of the muffin cups that have been prepared.
Each muffin cup should contain about 1/4 cup of the egg mixture.
Top each with Swiss cheese.
Frittatas should bake for about 25 minutes, until they are golden and puffy.
Because they will deflate like a souffle, remove immediately and let cool for just a few minutes.
