Maicena (Corn Pudding)
Make this cherished family recipe for maicena, a rich corn pudding flavored with vanilla and lemon rind, for a warm and cozy breakfast.
In a pot, warm cornstarch over medium heat.
Slowly stir in the milk.
Add salt and sugar.
For about 15 minutes, cook and stir until just slightly thickened.
In a bowl, whisk egg yolks.
Add 1/4 of the cornstarch mixture and stir.
Add the egg-cornstarch mixture to the cooking vessel.
About a minute of stirring and cooking will do.
Add the lemon rind; cook and stir for 7 to 10 minutes, or until thickened.
Remove from heat, then thoroughly combine in vanilla extract.
