Luscious Lemon Snowballs
These two-bite cookies are bursting with lemon flavor and have a slight crisp on the outside and a light, soft interior. These lemon zest cookies are the epitome of coolness thanks to cream cheese!
In a food processor, mash the lemon zest with the sugar by pulsing it several times.
Put 1/2 cup of the sugar mixture in a bowl.
In a mixing bowl, combine butter and cream cheese until smooth and creamy.
Add the remaining lemon-sugar mixture, egg, lemon juice, and vanilla extract.
Baking powder, salt, and moist ingredients are combined with an electric mixer; flour is added gradually to the mixture to create dough.
