Low Carb Zucchini Fries
Baked zucchini ‘fries’ are actually coated in an almond-Parmesan cheese coating and baked until crisp and golden brown.
Set oven to 425 degrees Fahrenheit (220 degrees C).
Use parchment paper to cover a baking sheet.
Slice each 3-inch-long piece of zucchini into nine fries.
Salt the zucchini fries before placing them in a colander.
To get rid of extra liquid, let the zucchini slices drain for at least an hour.
In a shallow bowl, beat eggs.
Blend almonds In a second shallow bowl, combine the parmesan cheese and Italian seasoning.
Zucchini should be rinsed of salt and dried with paper towels.
Before rolling in the almond coating, dip each zucchini piece in the beaten egg.
Place the seasoned fries on the prepared baking sheet.
