Lavender Shortbread Cookies
A buttery lavender-flavored dough that can be made into round shapes using a biscuit cutter, or various shapes using cookie cutters.

Butter, white sugar, and confectioners’ sugar are combined in a medium bowl and creamed until light and fluffy.

Add the lemon zest, mint, and lavender.

Mix the salt, cornstarch, and flour together before thoroughly blending it into the batter.

Divide the dough into two balls, wrap them in plastic wrap, and press them out to a thickness of about 1 inch.

For about an hour, refrigerate until firm.

Set the oven to 325 degrees Fahrenheit (165 degrees C).

The dough should be rolled out to a thickness of 1/4 inch on a lightly dusted surface.

Use cookie cutters to cut into desired shapes.

On these, cookie stamps will also work well.

Put on baking sheets.
