Irish Potato Soup

Irish Potato Soup
The flavor of smoky bacon is cooked throughout this creamy soup.

Over medium-high heat, add the bacon to a sizable deep skillet and cook, stirring occasionally, for about 10 minutes, or until evenly browned.

Slices of bacon should be drained, crumbled, and placed on a plate lined with paper towels.

Over medium heat, cook and stir onion and celery in the leftover bacon grease until the onion is tender and translucent.

After draining excess grease, add potatoes and stir.

With the exception of 1 inch, cover the potatoes with water.

Over medium-high heat, bring to a boil.

Then, reduce the heat to medium-low, and simmer the potatoes for about 15 minutes, stirring frequently.

Cook the mixture while stirring in the evaporated milk until thoroughly heated.

Add salt and pepper to taste.

Add bacon right before serving.
