With Chef John’s technique for light, crispy fortune cookies, you can finally deliver those funny, profound, and/or ridiculous messages you’ve been waiting to send.

3 inch wide paper fortunes can be printed and cut out.

Set the oven to 350 degrees Fahrenheit (175 degrees C).

Use parchment paper or a silicone mat to line a baking sheet.

In a bowl, mix the butter, vanilla extract, almond extract, egg white sugar, and milk.

Stir the sugar until it dissolves.

When the batter is smooth and comes off the whisk in ribbons, add the flour and whisk again.

Scoop 1 tablespoon of batter onto the prepared baking sheet, and use the back of a spoon to spread it out into a 4-inch circle.

repeat a second time.

Bake the first batch for about 10 minutes, or until the edges are crispy and golden brown and the centers are still pale.
