Hog’s Head Cheese
This is not actually cheese. It is a wonderful, spicy appetizer mold made of pork roast that is great served with crackers.

A 4 quart pot with medium-high heat is used to heat the oil.

Brown the pork roast all around after adding it.

Add the garlic, onion, bell pepper, celery, and reduce the heat to medium.

Garlic, parsley, basil, salt, pepper, and Cajun seasoning are used to season.

3 cups of water or pork stock should be added, then boiled.

For two hours, simmer covered over medium heat, stirring frequently every fifteen minutes.

The pork should be completely shredded and reduced to a stringy consistency when it is finished.

Stir the gelatin thoroughly into the pork mixture after dissolving it in 1 cup of boiling water.

For about 8 hours, pour into a mold or casserole dish, then chill until set.
