Hearty Vegetable and Macaroni Soup
After a chilly day outside, a bowl of steaming hot vegetable soup that is hearty with macaroni and has plenty of broth is a simple comfort food.
Over medium-low heat, warm the olive oil; cook and stir the onion in the oil until translucent, about 5 minutes.
Bring water, diced tomatoes, tomato juice, and chicken broth to a boil while stirring.
Stir in the ingredients (potatoes, cauliflower, celery, herbes de Provence, sugar, salt, black pepper, and bay leaves); lower heat, cover, and simmer for one hour while stirring occasionally.
Bring the soup back to a boil, add the macaroni, and cook for 6 minutes, or until the macaroni is tender but still firm to the bite.
Take the soup off the heat, and then wait five minutes before serving.
