Healthy Broccoli Cheese Bake
A more nutritious version of the classic casserole, made with mushrooms, peppers, and whole-wheat bread crumbs.
Set oven to 350 degrees Fahrenheit (175 degrees C).
Grease a 2-quart baking dish sparingly.
In a sizable skillet, heat the oil over medium-high heat.
Make the onion, bell pepper, and mushrooms.
Stirring frequently for 12 to 15 minutes, or until the mixture starts to brown, with 1/4 teaspoon salt and black pepper.
After adding flour to the mushroom mixture, stir for 1 minute.
Bring milk and the final 1/4 teaspoon of salt to a boil while stirring until smooth.
Boil for about 3 minutes, stirring frequently, until just starting to thicken.
Add 2 tablespoons of Romano and the cheddar.
Then, stir in the broccoli before adding the mixture to the baking dish.
Sprinkle bread crumbs and the final 2 tablespoons of Romano cheese on top.
Add a buttery touch.
