These vegan stuffed peppers have a hearty taste thanks to the roasted buckwheat.

Oil is heated in a pan over medium-high heat.

Cook the onion and garlic for about 5 minutes, or until the onion is almost clear but not yet browning.

Add the buckwheat and stir for about a minute to coat.

Bring to a boil after adding broth.

Simmer for about 15 minutes or until liquid is absorbed.

Add salt, pepper, and tomatoes, parsley, and red pepper flakes.

For about three minutes, stir and cook until thoroughly heated.

Set the oven to 350 degrees Fahrenheit (175 degrees C).

Remove the peppers’ tops and seeds.

Fill a saucepan with water until it is just below the bottom of the steamer insert.

Water is brought to a boil.

Add the peppers, cover, and steam for 5 minutes, or until they are tender.
