Easy Sausage and Shrimp Gumbo
A nice variation on the traditional Cajun stew typically served over rice, sausage and shrimp gumbo is ideal for cold evening meals.
Over medium heat, cook and stir the oil and flour mixture until it is thick and peanut butter-colored, about 20 minutes.
Add celery, onion, and green bell pepper to the flour mixture and stir-fry for about 5 minutes, or until the vegetables are soft.
Sausage will brown after about five minutes of cooking and stirring.
Black pepper, garlic, and Cajun seasoning are added.
Cook and stir until fragrant, about 2 minutes.
After adding chicken stock, the vegetable-sausage mixture should simmer for 30 minutes on low heat.
Add shrimp and cook for about 10 minutes, or until pink and cooked through.
