Drowned Beef Sandwich with Chipotle Sauce (Torta Ahogada)
Sauteed roast beef with a chipotle sauce is served on a bolillo bun and dipped in more chipotle sauce in this Mexican-inspired drowned beef sandwich.
In a saucepan, combine beef broth, 1/4 cup chopped cilantro, and chipotle cooking sauce.
Bring to a boil.
Simmer for 10 minutes while stirring occasionally on medium-low heat.
Over medium-high heat, add oil to a skillet and cook onion for about 5 minutes, or until soft.
Cook the onion and garlic together for one minute.
Add the roast beef and 1/4 cup of the chipotle sauce mixture, and cook for about 2 minutes while constantly stirring.
Pour the remaining mixture of chipotle sauce into 4 bowls for dipping.
Using a cilantro sprig as a garnish, place the top of each bun on top of the roast beef mixture.
Sandwiches are dipped in sauce.
