Donna’s Coconut Almond Cookies
Kids will love these flavorful, fluffy cookies that are simple to make and packed with coconut and a sweet chocolate drizzle.
Set oven to 350 degrees Fahrenheit (175 degrees C).
Use parchment paper to line two baking sheets.
Cream together the butter, shortening, and sugar in a bowl.
Add salt, vanilla, and almond extracts to the creamed mixture.
Beat in flour gradually until smooth.
Mix the coconut into the dough.
Place heaping tablespoonfuls of dough on prepared baking sheets, roll into balls, and space them about 2 inches apart.
Cookies are pressed using a flour-dusted glass bottom until they are 1/4 inch thick.
For about 10 minutes, bake in the preheated oven until just lightly browned.
Before removing cookies from baking sheets, let them cool for two to three minutes.
