Date Nut Pinwheel Cookies I
This recipe makes rolled cookies with a date-filled center.
Use a food processor to chop pitted dates.
Add dates, 1/4 cup sugar, a dash of salt, and 1 1/4 cups water to a small saucepan.
Cook with constant stirring until the mixture has a soft consistency.
Get rid of the heat.
Add the chopped nuts, lemon juice, and grated lemon rind.
Shake well, then chill.
1/2 cup of white sugar and 1 cup of lightly packed brown sugar are gradually added to 3/4 cup of butter as it is being creamed.
