Curtido (Salvadoran Pickled Slaw)
Most meals in El Salvador include curtido, a pickled mixture of cabbage, carrot, and onion. It’s simple to make at home.
In a big bowl, combine the cabbage, carrots, onions, and chili peppers.
Salt the surface evenly.
Add boiling water on top.
about an hour to cool to room temperature.
Add oregano and vinegar to the cabbage mixture.
Take care when combining.
Cover and chill for eight to twelve hours to allow flavors to meld.
