Crunch’s Lentil Salad
A simple main dish for lunch or dinner is a lentil and bulgur salad with lots of vegetables.
Lentils and water should be brought to a boil in a pot.
Add bulgur and salt after lowering the heat to medium-low and simmering the lentils for about 15 minutes, or until they are almost tender.
For about 20 minutes or until the bulgur is tender and the water has been absorbed, cover the pan and turn off the heat.
In a skillet with 1 teaspoon of olive oil heated over medium heat, cook and stir the onion and garlic for 5 to 10 minutes, or until they are soft and fragrant.
Red bell pepper and tomatoes should be added; cook and stir for 5 to 10 minutes, or until red bell pepper is tender.
In a bowl, combine the bulgur-lentil mixture with the vegetable mixture.
Drizzle with the balsamic vinegar and two tablespoons of the extra virgin olive oil.
