Creamy String Bean Soup
String beans are cooked in salted water with potatoes, sauteed onions, vinegar and a clove of garlic in this German soup thickened with sour cream.
Use salted water to cook potatoes.
Add beans, vinegar, pepper, and garlic when halfway done (spear on toothpick for easy finding).
the onion Simmer potatoes until they are done.
Garlic glove removed.
Make a smooth paste out of the flour and 1/4 cup of water.
With the flour paste, thicken soup.
Get rid of the heat.
Stir in sour cream gradually.
Don’t continue to cook.
Just before serving, add cooked and diced Mettwurst or another German sausage.
